The Caraccioli Brut is a blend of 60% Chardonnay and 40% Pinot Noir. All grapes are hand-harvested and lightly pressed. The fermentation begins in stainless steel, with 40% of the wine finishing the fermentation in neutral French oak barrels. The wine is aged for 4 years on the lees and a further 16 months under cork after disgorgement. The resulting wine is one of the most complex, flavorful and rich sparkling wines made in the country today.

Michel Salgues, previously head winemaker at Roderer Estate, is the head winemaker and through his techniques and expertise the family vision is precisely executed. Looking to showcase vintage variation the wines receive minimal manipulation, and all sparkling wines are vintage dated.

Lots of chalk and baking soda aromas leap out of the glass in this bottling, which also shows a light grapefruit scent on the nose. Tart lemon and grapefruit flavors mix with wet stone on the palate. MATT KETTMANN
